This is one of Veronica's recipes inspired by finding new ways to use up her parsnips!
Carmelize the onion in a big pot with some oil or butter
Add the broth, parsnips, sweet potato, and pear to the pot and bring to a boil
Simmer for about 20 minutes, until the parsnips and potatoes are soft
Blend, add salt and pepper to taste
Serve topped with some chopped parsley
