Parsnip and Pear Soup

This is one of Veronica's recipes inspired by finding new ways to use up her parsnips!

Ingredients

  • 3 cups Parsnips Peeled and chopped in big pieces
  • 2 Ripe pears Cut into pieces
  • 1 Sweet potato Peeled and cut into pieces. If the pears are too sweet, substitute sweet potatoes for a regular potato instead. Add sweet potatoes if pears aren't sweet enough.
  • 5 cups Chicken or vegetable broth
  • 1 Onion Cut into cubes
  • Handful of parsley
  • Salt and pepper to taste

Instructions

  1. Carmelize the onion in a big pot with some oil or butter

  2. Add the broth, parsnips, sweet potato, and pear to the pot and bring to a boil

  3. Simmer for about 20 minutes, until the parsnips and potatoes are soft

  4. Blend, add salt and pepper to taste

  5. Serve topped with some chopped parsley
