With fall gently peering around the corner, it’s time to pull out our cozy sweaters and start thinking about warm, comforting, and nourishing dishes. Here are two Autumn-inspired recipes – one savoury, one sweet – to see you through the shorter days with a full belly and a hearty smile.
Parsnip and Pear Soup
This is one of Veronica's recipes inspired by finding new ways to use up her parsnips!
Ingredients
- 3 cups Parsnips Peeled and chopped in big pieces
- 2 Ripe pears Cut into pieces
- 1 Sweet potato Peeled and cut into pieces. If the pears are too sweet, substitute sweet potatoes for a regular potato instead. Add sweet potatoes if pears aren't sweet enough.
- 5 cups Chicken or vegetable broth
- 1 Onion Cut into cubes
- Handful of parsley
- Salt and pepper to taste
Instructions

Carmelize the onion in a big pot with some oil or butter

Add the broth, parsnips, sweet potato, and pear to the pot and bring to a boil

Simmer for about 20 minutes, until the parsnips and potatoes are soft

Blend, add salt and pepper to taste

Serve topped with some chopped parsley
Gluten-Free Apple Crisp
This is a favourite of mine from ALL THE healthy THINGS
Ingredients

Filling
- 2-3 small/medium Granny Smith apples peeled and thinly sliced
- 2-3 small/medium pink lady apples peeled and thinly sliced
- 1 tsp ground cinnamon
- 1/2 tsp ground cardamom
- 1 tbsp vanilla extract
- 1 tbsp arrowroot or corn starch
- 1/3 cup maple syrup
Crisp Topping
- 1 1/2 cups gluten-free old fashioned oats
- 1/2 cup almond flour
- 1/2 cup dark brown sugar
- 1 tsp baking powder
- 6 tbsp unsalted butter cubed
- 1 Pinch of salt

Directions:

Preheat your oven at 350 degrees.

Add the sliced apples, cinnamon, cardamon, vanilla, arrow or corn starch, and maple syrup to a large bowl. Toss until everything is well combined and apples are well coated.

Transfer the apples to a greased 8×8 baking dish.

Make the crisp topping by adding the oats, almond flour, dark brown sugar, ground cinnamon, and baking powder to the mixing bowl. Using a fork, mix all the dry ingredients together until well combined.

Add the cubed butter to the mixing bowl. Using your hands, work the butter into the dry ingredients until you have a clumpy crisp topping.

Sprinkle the crisp evenly over the apple filling. Bake the crisp at 350 degrees for 55-60 minutes, until the apple filling is bubbling. To prevent the crisp from burning or becoming too brown, cover it loosely with a sheet of foil after 20-25 minutes.

Once the crisp is done, remove it from the oven and let it cool for 10-15 minutes before serving.
